Our decaf process uses a natural carbon dioxide (C02) process called effervescence retaining 95% of polyphenols. Others use ethyl acetate solvent retaining 30%.

This green tea retains 95 percent of the polyphenols and has a typical grassy green tea taste. There are two decaffeinating methods. One uses the solvent ethyl acetate, retaining only 30 percent of the healthy polyphenols. We use only the alternative natural process using water and carbon dioxide (C02) circulation called 'effervescence' that uses high pressure and temperature to extract the caffeine. The distinct character of the tea is retained. Although there is a slight change in tea character due to the process it does not leave the chemical overtones of the other process.

Hot Tea:
- Boil water and let cool to 203F/95C
- Steep for 2-4 minutes (longer=stronger)
- Use approx. 2-4 tsp per cup
- To re-infuse use higher temperature/less time

Iced Tea:
- Pour 1 1/4 cups boiled water on 5 tsps of tea
- Steep for 5 minutes
- Pour into pitcher while straining leaves.
- For a quart of tea add ice & top w/cold water
- Garnish and sweeten to taste

Note:
Caffeinated green tea has about 1/2 the caffeine of a cup of coffee. It also contains the amino acid theanine, a relaxant that counterbalances caffeine's stimulant effect. That's why caffeine from tea affects people differently than caffeine from coffee.
